Cream of carrot soup















Servings: 3

Ingredients:


Content

Carrots
2 medium
Peeled and diced
Onion
1 medium
Sliced
Garlic
3-4 cloves

1 cup

Water
As required

Salt
To taste

Cream
2 tbsp

Olive oil / Ghee
1 tbsp



Method:

Heat oil / ghee in a pan. Add the garlic and saute. Add onion and saute for a minute. Add the carrots and saute. Add a pinch of salt, water and mix well. Cook covered until carrots are soft. Grind the mixture into a smooth paste. Mix vegetable stock with the paste. Add water if required. Add salt to taste, cream and mix well. Boil it for 2-3 minutes. Serve hot.
