Coconut Rice / Tenginakayi anna

Rice
1 cup
Cooked
Coconut
½ cup (6-7 tbsp)
Dessicated
Coconut oil
2-3 tbsp

Cashewnuts
10-12
Split
Salt
To taste

Jeera
1 tsp

Curry leaves
1 sprig

Dried red chillies
2-3 broken


Method:

Heat oil in a pan on medium flame. Add jeera, curry leaves, red chillies, cashew-nuts and saute till the nuts start changing color. Reduce the flame to low and add the coconut and saute for a minute till raw smell is gone. Add the cooked rice, salt to taste and mix well.





Serve hot.
