Peanut Curry (dry)
















Servings: 2-3

Ingredients:

Raw peanuts
250 grams

Water
To cook

Salt
To taste

Sugar
¼ tsp

Green chillies / Dry red chillies
2-3 broken

Curry leaves
1 sprig

Coriander leaves
2-3 tbsp

Oil
2 tbsp

Mustard
1 tsp

Jeera
1 tsp

Coconut
2-3 tbsp

Lime juice
1 tbsp / ½ lime


Method:

Wash the peanuts. Take a tumbler with water and a tbsp of salt. Add the peanuts and cook on low flame till you start getting the aroma of cooked peanuts. To check if the peanuts are cooked, break one shell and taste it. Drain and set aside to cool a bit. De-shell the peanuts.





Heat oil in a pan. Add mustard, once it starts popping, add jeera, curry leaves, chillies, and saute once. Add the cooked peanuts. Adjust salt. Add sugar, coconut, and cook covered for a minute more. Switch off the flame. Add lime juice and mix well. Garnish with coriander leaves.





Serve hot / cold with rice, roti, chapati,....

Tip:

Use green chillies for enhanced taste.
