Sweet Potato Curry (dry)
















Servings: 2-3

Ingredients:

Sweet potato
2 medium
Washed, cleaned and cut into half
Water
To cook

Salt
To taste

Green chillies
2 medium
Slit
Oil
2-3 tbsp

Mustard
1 tsp

Jeera
1 tsp

Curry leaves
1 sprig

Coriander leaves
2-3 tbsp

Coconut
3-4 tbsp


Method:

Pressure cook sweet potatoes for 3-4 whistles. Cool and peel. Dice the potatoes.




Heat oil in a pan. Add mustard, once it starts popping, add jeera, curry leaves, green chillies and saute once. Add the diced sweet potatoes, salt to taste, coconut, mix well. Sprinkle some water and cook covered for a minute more. Garnish with coriander leaves.






Serve with roti, chapati, rice, or as a snack….
