Method:
Traditional Indian yellow cucumber looks as shown below.
Add the chopped cucumber, slit green chilies, salt, jaggery and mix. (Jaggery is important as this variety of cucumber tastes a bit bitter)
Add 1-2 tsp of water if you feel it dry. Cook covered for 5mins or until the cucumber turns soft.
Add the desiccated coconut, coriander leaves and mix. Turn off the heat and keep it covered for 2-3 mins.
Serve hot with the dish of your choice.
